Sabudana Vada Recipe

Sabudana vada is a popular deep-fried snack from Indian cuisine, commonly consumed during fasting periods. It is made using soaked sabudana (tapioca pearls), mashed potatoes, and various spices. Here's a recipe to make sabudana vada:

Ingredients:

  • 1 cup sabudana (tapioca pearls)
  • 2 medium-sized potatoes, boiled and mashed
  • 1/2 cup roasted peanuts, coarsely ground
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger, grated
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice
  • Salt to taste
  • Oil for deep frying

Instructions:

  • Rinse the sabudana under running water 2-3 times. Then, soak it in water for 4-5 hours or overnight until the pearls are soft and plump.
  • In a mixing bowl, combine the soaked sabudana, mashed potatoes, ground peanuts, green chilies, ginger, sugar, lemon juice, and salt. Mix well to form a thick and sticky mixture.
  • Heat oil in a kadai for frying. Make sure the oil is adequately hot but not smoking.
  • Take a small portion of the mixture and shape it into a ball. Flatten it slightly to form a disc-shaped vada. Repeat the process with the remaining mixture.
  • Gently slide a few vadas into the hot oil and fry them on low-medium heat until they turn golden brown and crispy. Flip them occasionally to ensure even frying. Do not overcrowd the pan; fry in batches.
  • Once the vadas are fried, remove them from the oil using a slotted spoon and place them on a paper towel to absorb any excess oil.
  • Repeat the frying process with the remaining vadas.
  • Serve the sabudana vadas hot with chutney, yoghurt, or a cup of tea.

Sabudana vadas are best enjoyed immediately after frying while they are still crispy. They make a delightful snack or breakfast option during fasting days or any time you crave a delicious and flavorful treat.
