Ankurit moong ke appe | Healthy Appe Recipe | अंकुरित मूंग के अप्पे | Sprouted moong (mung bean) appe is a healthy and delicious South Indian snack or breakfast dish. It is similar to the more popular paniyaram. Here's a simple recipe to make sprouted moong appe.

Ingredients

  • 1 cup sprouted moong beans
  • ½ cup rice
  • 2-3 tbsp of finely chopped onions
  • ½ tbsp of finely chopped carrots
  • 3-4 tbsp of finely chopped capsicum
  • Salt to taste
  • ¼ tsp of baking soda
  • 2 tbsp of yoghurt (curd)
  • ¼ tsp of turmeric powder
  • 1/2 tsp of cumin powder
  • 1 tsp of coriander powder
  • ½ tsp of cumin seeds
  • ½ tsp of mustard seeds
  • oil or ghee

Procedure :

  • Wash the sprouted moong beans thoroughly and drain any excess water. You can either use store-bought sprouts or sprout them at home by soaking moong beans overnight and then allowing them to sprout over a couple of days.
  • Wash the rice and soak it in enough water for at least 4-6 hours, or overnight.
  • After soaking, drain the water from the rice.
  • Grind the rice in a wet grinder or a high-speed blender with just 1-2 tbsp of water to make a smooth batter.
  • Add sprouted moong beans, yoghurt in the same jar and grind it into a smooth batter.
  • Transfer this batter to a large mixing bowl.
  • In a mixing bowl, add chopped onions, carrots, bell peppers, cilantro, turmeric powder, cumin powder, coriander powder, salt. Mix everything well.
  • Add baking soda and mix well.
  • Heat the appe pan on medium heat and add a few drops of oil or ghee in each cavity.
  • Pour a spoonful of the batter into each cavity, filling them up to about 3/4 full. Cover the pan and let the appe cook on medium-low heat for a few minutes.
  • When the bottom side turns golden brown and crisp, use a skewer or spoon to flip the appe over and cook the other side. - You can add a little more oil or ghee around the edges if needed.
  • Once both sides are golden brown and the appe is cooked through, remove them from the pan and place them on a serving plate..
  • Repeat the process for the remaining batter, adding a little oil to each cavity before pouring in the batter.
  • Serve the sprouted moong appe hot with coconut chutney, tomato chutney, or sambar.
